01 - 8 large fresh spinach leaves, washed and dried
→ Filling
02 - 3.5 oz cream cheese, softened
03 - 1 tbsp fresh chives, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - Salt and pepper, to taste
→ Vegetables
07 - 1 small carrot, julienned
08 - 1/2 small red bell pepper, julienned
09 - 8 small cherry tomatoes, for garnish
# Method:
01 - In a small bowl, mix the cream cheese, chives, parsley, lemon juice, salt, and pepper until smooth and combined.
02 - Lay each spinach leaf flat on a clean work surface.
03 - Spread approximately 1 tablespoon of the herbed cheese mixture onto the center of each spinach leaf.
04 - Place a few julienned carrot and red bell pepper strips atop the cheese mixture in each leaf.
05 - Carefully roll up each spinach leaf, folding in the edges to enclose the filling securely.
06 - Fasten each wrap with a toothpick and top with a cherry tomato for a festive presentation.
07 - Enjoy immediately or chill briefly before serving.
