25 - 1/2 cup plus 2 tablespoons all-purpose flour, heat-treated
26 - 1/4 teaspoon salt
27 - 1/3 cup mini chocolate chips
# Method:
01 - Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a mixing bowl, whisk together melted butter, granulated sugar, and light brown sugar. Incorporate eggs and vanilla until mixture is glossy. Gently blend in cocoa powder, flour, and salt until just combined. Spread evenly in the lined pan.
03 - In a separate bowl, whisk pumpkin puree, egg, vegetable oil, and granulated sugar until smooth. Add flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt; mix just until incorporated. Spoon and spread evenly over the brownie batter.
04 - Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely in the pan.
05 - Using an electric mixer, cream softened butter, brown sugar, and granulated sugar until light. Add milk and vanilla; mix well. Blend in heat-treated flour and salt until smooth. Fold in mini chocolate chips.
06 - Once brownie-pumpkin base is fully cooled, spread cookie dough layer evenly on top. Chill for 30 minutes before slicing into squares.
